Chicken is one of the most versatile meats you could ask for, with so many recipes, your head could spin. It is also a healthy, low fat meal that will give you all the protein you and your family need, but who has time to prepare a chicken dinner every week?
That was a trick question, because of course, you do! We just found an awesome recipe for chicken that will have you dishing out a spectacular meal with very little effort. You are going to love this recipe when you make it.
To make our favorite slow cooker chicken you will need one whole 4 pound chicken, one and a half teaspoons of kosher salt, three quarters of a teaspoon of black pepper, and a half teaspoon of smoked paprika. You will also need a slow cooker or crockpot, aluminum foil, and butcher string.
Begin by wadding up four or five sheets of aluminum foil and evenly spacing them in the bottom of the crock pot. Then remove the giblets from the chicken cavity and rinse and dry the bird to clean it and get as much moisture out of it as possible. Next, generously season the chicken both inside and out with the salt, pepper and smoked paprika. Tie the chicken’s legs together with the string and place it into the slow cooker centered on the balled up aluminum. Cover the crockpot and cook for two and a half to three and half hours on high, until the internal temperature reaches 165 degrees at the thickest part of the thigh. If you want a crispier skin, preheat your oven to broil and when the chicken is done in the crockpot, put it on a pan and broil it for about five minutes. then , just let it rest for ten minutes before serving and your dinner guests will be amazed.

To make this fantastic chicken soup you will need four potatoes, four peeled carrots, two diced onions, four sliced celery sticks, four cloves of crushed garlic, two boxes of chicken stock, one packet of french onion soup, and six whole thighs of chicken trimmed of fat.
Start by placing your potatoes, carrots, onions, celery, garlic, into the crock pot (in that order). Then mix your french onion soup with your chicken stock in a large bowl, then pour it in over the veggies.Next, take your chicken thighs and push them under the liquid, and into the veggies. Cook on high for 4 hours, or low for 8 hours. Then remove your chicken from the slow cooker, shred it, and put it back in the pot and stir. Finish by serving the soup in a bowl, and sprinkle fresh parmesan cheese and a little parsley on top. We also suggest serving this dish up with a crunchy piece of french bread smothered in butter.
