It may be summer outside, but it is never too late to start planning your autumn recipes. And one star ingredient that will get a lot of focus when the days get shorter and the shadows grow longer are sweet potatoes. To make these delicious hasselback maple pecan sweet potatoes you will need two sweet potatoes, olive oil, salt, melted butter, ground cinnamon, chopped pecans, maple syrup, vanilla extract, and a pinch more salt.
Before you start, preheat your oven to four hundred twenty five degrees. Now, begin by cutting through the sweet potatoes almost but not entirely, to make a kind of accordion effect. Then place them in a casserole dish and brush in olive oil. Next, season with a dash of salt and put the dish in the oven for thirty to forty minutes. While they are baking, combine the melted butter, maple syrup, chopped pecans, ground cinnamon, vanilla extract, and a pinch more salt into a bowl and lightly mix. Remove the sweet potatoes from the oven and cover with the toppings, making sure that they get into each of the crevices. Now, return the sweet potatoes to the oven for another eight to ten minutes. Plate them up and watch your dinner guests be amazed at your culinary skills!

Well, if you’d like to go a little more traditional with your sweet potato dishes try this easy slow cooker sweet potato casserole recipe. You will need two 29 ounce cans of sweet potato, a quarter cup butter, two tablespoons sugar, two and a half tablespoons brown sugar, one tablespoon orange juice, two large eggs, 1 teaspoon vanilla extract, and a half a cup of milk. For the topping you will need three quarters of a cup of pecan chips, two thirds of a cup brown sugar, a quarter cup white flour, a quarter cup melted butter, and one teaspoon of vanilla extract.
To make the sweet potato casserole, open and drain the cans of sweet potato and then put into the crock pot.add the butter, white sugar, brown sugar, orange juice and a pinch of salt. Then, in a small bowl lightly beat the eggs. Add them, the vanilla extract and milk to the slow cooker and beat until smooth. In another small bowl, combine all the topping ingredients and then place on top of the casserole. Cover and cook on high for two and a half to four hours, depending on the power rating of your crock pot.
