If you’ve never had the potato and bacon bake before, then you’re going to love this hearty side. And if you’re a red-blooded American and bacon lover, this will probably become something you make on a regular basis. Check out how to make this relatively cheap side dish that is loaded with flavor!
Preparation time is minimal for this delectable potato and bacon bake. And you can find all the ingredients easily at any grocery store.
-3lbs potatoes, peeled and halved (along the short way)
-1lb of bacon, diced
-2.5 cups shredded cheddar cheese
-1 medium brown onion, sliced
-2 tbsp. butter
-3 tbsp. all-purpose flour
-2 cups milk
-1/2 tsp. salt, more to taste
-1/2 tsp. pepper, more to taste
-2-3 garlic cloves, minced
-1/2 cup green onions, chopped
First you need to parboil your cut potatoes. You are not cooking them all the way through, you just want to reduce how long it will take to bake them in the oven. Boil them for about 10 minutes, then drain the water and set them aside to cool.
As the potatoes parboil, sauté the diced bacon, onion, and garlic. When the bacon is browned and the onions have softened, take it off the heat. Then put the mix in a bowl to set aside. Do NOT toss the bacon grease left in the pan.
When the potatoes have cooled, sliced them into disks.
Melt the butter in the bacon-greased pan. Mix the flour and salt – stir constantly to prevent the flour from burning. When it’s mixed, pour the milk and keep stirring. Cook until the mixture has a thick consistency. Then add 2 cups of cheese, the ground pepper, and stir until melted. Remove the sauce from the heat.
Spoon some of the cheese sauce onto the bottom of your 13×9 casserole dish. Then lay out a layer of potato disks. Sprinkle those with ½ the bacon mixture. The douse with half the sauce. Repeat this process to create a second layer of cheesy potato and bacon goodness.
Sprinkle the remaining ½ cup of shredded cheddar on top of the ready-to-bake dish.
Pop it into the 350°F oven and bake for 45 minutes. You’ll know it is done when the top is bubbling and the cheese is golden.
Let it cool for 15 minutes. Then serve it as the perfect side dish.
Optional: Top it with green onions, salt, and pepper to taste.
