One of my favorite things about the end of summer is the harvesting of corn crops. Corn is as American as anything. Native Americans spend generations harvesting corn and perfecting the process. And in years since the founding of the United States, corn has become even more essential. While you’ll find some derivative of corn in many common items (corn syrup, for example), a perfectly cooked corn on the cob with butter just cannot be beaten.

While I enjoy tossing some buttered corn on the grill (especially when hosting my pre-pandemic Labor Day events), sometimes, I just don’t have time to fire up the grill. During these moments, my preferred method of cooking corn on the cob is one that might shock many of you. Microwaving, it works and results in a side dish that tastes delicious.

Another benefit of cooking your corn on the cob in the microwave is the fact that it only takes about three minutes per ear. That can save you a lot of time – especially if you’re only making dinner for one or two.

Before you put your corn in the microwave, there are a few things you should know. Always support your local farms whenever possible. Not only does shopping at a farm near you give you access to extremely fresh produce, but it also gives your local economy a boost. During these unprecedented times, we need to do everything we can to support our farms and those who work them. Unless you’re growing corn yourself or know someone who is, take a trip out to one of the local farms in your area – no matter where you live, you’re bound to find a few options.

Once you have the ear of corn ready to go, you can start preparing it to be cooked in the microwave.

First, do NOT shuck the corn. That’s right. If you want to use your microwave for cooking some delicious corn on the cob, you can get the best results by letting it steam within its own husk. So leave that protective layer on the corn and nature (plus, the science behind the microwave) will do the rest for you.

Place the corn in the microwave and cook it on high for three to four minutes. That’s 3 to 4 minutes on high in your microwave, depending on how much power it has built into the system.

After it finishes cooking, carefully remove it from the microwave. You’ll need to be able to identify the stalk end of the corn. This should be pretty easy to do, even for those of us who do not have green thumbs. The stalk end is the end that was attached to the stalk of the plant. You’ll want to slice the tip-off about an inch above where the kernels start.

Squeeze from the other end and shake the corn. It should just slide right out of the husk onto a plate.
