It’s not complicated to make and, if you do it correctly, you get the perfect melted cheese sandwiched between golden brown crispy grilled bread. While grilled cheese sandwiches are almost foolproof, there is one simple trick that is a game changer.
Here’s the thing. A grilled cheese sandwich is not complicated, but there are definitely tips that ensure everything works out perfectly — such as making sure to preheat the pan and using softened butter that can easily be spread over the entirety of the bread. Of course, everyone has their own idea of a perfect grilled cheese, with variations in the bread and cheese used.
Some people swear by American cheese for its ability to easily melt uniformly, while others will rely on cheddar for a sandwich with a little more flavor. Some prefer to use white bread, while others use sourdough or even pumpernickel for a decidedly different flavor.
Whatever cheese or bread you choose, there’s one ingredient you probably never would have thought to add to the mix, but this totally will take your grilled cheese to the next level: mayonnaise.
It absolutely sounds bizarre as this is a sandwich that typically requires no condiments. Some people do add a Dijon or spicy mustard to enhance the flavor profile, but mayo?
In this case, however, mayo takes the place of butter. So, rather than smearing on butter, you’ll sub in mayonnaise. PureWow explains how mayo is the thing that many people have been missing if they’re looking for a more crispy and flavorful sandwich.
PureWow notes: “Mayo spreads better than butter does (crucial when you’re using a softer bread like brioche) and has a higher smoke point (meaning it won’t burn as easily). Plus, the oil and egg in mayonnaise brown nicely and add a creamy flavor to the crust.”
It honestly makes so much sense. So, grab a couple of slices of your favorite bread and some cheese slices, as well as 2 to 3 teaspoons of mayo. Heat a pan over medium heat and spread one side of each slice of bread with an even layer of mayo.
Next, place one slice of bread in the pan, mayo side down and lay the cheese on top, finishing with the other slice of bread, mayo side up.
Cook for a few minutes until the bottom piece of bread is golden brown, flip and cook for a few more minutes until the other side is golden brown and the cheese has melted.
